Grilled Pizza

This takes some work but very good. The pizzas grill fast so have all the toppings ready by the grill to put on the pizzas or they will burn.

Ingredients:

Pizza Dough:
1 c. warm water
1 T. sugar
1 pkg. or 2 1/4tea. of yeast

2 1/4 c. all purpose flour
1c. cake flour
1 T. kosher salt

Directions:
Combine water , sugar, and yeast. Proof until foamy, about 5 minutes.Mix flours and salt in the bowl of a stand mixer fitted with a dough hook.Add oil to yeast mixture once it has proofed, then pour into flour mixture. Knead on low for 10 mi.Place dough in a lightly oiled bowl and cover with plastic wrap in a warm area until doubled, about 2 hr.Punch down and make four balls. cover and let rise for another hour. While that is rising make the tomato sauce.
add:2 T. olive oil

Oven-Roasted Tomato Sauce

Combine:
2 lbs. roma tomatoes, quartered
1/2 c. yellow onion, chopped
2 cloves garlic whole
1 tes. kosher salt
1/2 tea. red pepped flakes
1/2 tea. sugar

1/4 c. olive oil
1/8-1/4 c. basil
Directions:
Preheat oven to 450. combine tomatoes, onion, garlic, salt, pepper, and sugar in a large casserole dish.Toss with olive oil and roast for 35-40 min until tomatoes are softened.Remove and mash, keeping tomatoes a little chunky. Stir in basil.

Pizza Toppings:

mozzarella cheese
parmesan cheese
pepperoni
or whatever you like!

Grilling:

Preheat grill with oneside set to medium-high and the other side to low. You don't have to have a double grill to do this!!Now shape balls on a floured surface into 10-12 in circles. Place one dough on the medium-high side, close lid and cook for 2-3 min. The crust will bubble and grill marks will appear underneath. After the 3 min. use tongs to flip the crust over and move the the other side of the grill or to a baking sheet. Brush with olive oil and add mozzarella, pepperoni, tomatoe sauce, mushrooms, parmesan cheese and red pepper flakes. return to medium-high grill till cheese has melted about 4-5 min.
